Make delicious Chai Tea at home! (Daniel Fast approved recipe)

I love, adore, am enraptured by...chai tea. It is displacing my need for a morning cup of coffee...and, as an added bonus, it's good for you!! Most recipes call for milk and brown sugar, but, I have replaced that with soy milk and blue agave / stevia sweeteners. Also, I use decaf black tea...totally legit. ;)
Dump the spices into the hugest pot in your house. Make sure not to clean off the black spots off your pans for the pictures, either. It adds character. Now, bruise the spices, to release the scrumptious aroma. (give them some good hard smacks with a wooden spoon - especially the cardamom pods!)
Add your water and bring to a boil. Then, partially covered, simmer for 10 minutes.
Add the tea bags and allow to steep for 5 minutes (off heat). But, like a bozo, don't take picture.
Nab the tea bags out of the pot. Add soy milk and truvia and/or stevia. Turn on the heat and stir until dissolved.
Use a large bowl, place a colander inside and then pour the tea into the bowl (preferably with a pour spout). Lift out colander. Pour into large ball jars. Allow to cool on the counter before twisting on the lids. Keeps in the refrigerator for days (but don't worry, it won't last that long!)
Pour over ice for a yummy refreshing drink or heat up in a microwave-proof mug. This would be a fun thing to serve for a large group as well.

Chai Tea Recipe: adapted from Epicurious
4 inches of sliced ginger
4 cinnamon sticks
4 tsp. black peppercorns
20 whole cloves
12 cardamom pods
12 cups of cold water
16 bags of decaf black tea
4 cups of unsweetened soy milk
1/2 cup blue agave syrup + 1/2 cup of truvia sweetener (sweeten to taste)
Directions:
Combine the spices and bruise in the bottom of pot. Pour 12 cups cold water over the spices and bring to a boil. Keep partially covered and simmer for 10 minutes. Remove from heat. Add tea bags and steep for 5 minutes. Remove tea bags. Add sweeteners and soy milk, whisking until sugar dissolves. Bring tea to simmer over med-high heat. Strain chai and serve immediately or store in fridge. Great served hot or over ice!
